<p>I just made this yummy Paleo Pizza for the family tonight and, although the kids didn't touch it, Meghan and I loved it. I have tried a number of Paleo crust recipes, and this one gets some big stars:</p>
<p><strong>Cauli-Crust</strong></p>
<p><strong>Crust</strong>:</p>
<p>1 head of cauliflower, steamed and crushed into cauliflower&nbsp;&ldquo;rice&rdquo; (approx. 3 cups). (I actually don't steam it to make the "rice". Just grate in a Cuisinart)</p>
<p>3 eggs</p>
<p>3/4 cup almond meal</p>
<p>1 tbsp. oregano</p>
<p>1/2 tbsp. garlic powder</p>
<p>1/2 tbsp. crushed red pepper flakes</p>
<p>1 tsp. salt</p>
<p>2 tbsp. olive oil</p>
<p><strong>Toppings:</strong></p>
<p>1-2 cups pizza or marinara sauce</p>
<p>1 cup diced pineapple</p>
<p>1/2 diced orange, red, and green bell pepper</p>
<p>1/2 diced onion</p>
<p>8 ounces of sliced ham, diced</p>
<p>Notes:</p>
<p>Experiment with any and all toppings!</p>
<p><strong>Directions:</strong></p>
<p>1. Preheat oven to 450 F.</p>
<p>2. In a large bowl, mix together cauliflower rice, eggs, almond</p>
<p>meal and spices.</p>
<p>3. Grease a large cookie sheet. Place cauliflower mixture on&nbsp;the sheet and shape into a large, thin circle a half-inch thick. Use the back of big spoon, starting at the center, and message it out evenly in a circular pattern.</p>
<p>4. Brush the top with olive oil.</p>
<p>5. Bake in the oven for 20 to 25 minutes until the top is brown&nbsp;and crisp.</p>
<p>6. Remove from oven and immediately spread tomato sauce&nbsp;on the crust.</p>
<p>7. Cover the cauli-crust&nbsp;with the toppings and&nbsp;place under a broiler&nbsp;for 3 minutes to heat&nbsp;the toppings.</p>
<p>8. Serve and enjoy!</p>

( Five meals will be our challenge for&nbsp; today.)&nbsp; We bought turkey meat, grapes, apples, &nbsp;avacado and mineral water.&nbsp; This covered us for one meal and a snack.</p>

<p>Sorry I have been a little MIA lately.  I am recovering from my leg, and menatlly it is harder than anything.  I found a cute sating that has been in my head the last few days. I am trying to get more mentally prepared for this healing stage.</p>

<p>Here is the article I wrote and submitted to the CrossFit Journal.</p>
<p>CrossFit is a family.  A Family like the Kiddoo’s.</p>
<p> </p>
<p>Luckily for me I joined this amazing family by marrying my high school sweetheart. Only it was 20 years later.  So I may be a little biased.  But I think my husband’s family could win the <strong>Fittest family on the planet!</strong>  Is there a title for that in 2013?</p>
<p> </p>
<p>When anyone hears I am a Kiddoo, there are two questions that follow.</p>
<p> “Are you a runner? “ ,“And Do you do CrossFit?”</p>
<p>Well, I have never been a runner, but I did start CrossFit in January 2011 to keep up with my husband. </p>
<p> </p>
<p> </p>
<p>Our small town box is populated with many of the Kiddoo family.  Intensity has often been measured by how many Kiddoo’s are present at a WOD.  “The competition the Kiddoo’s bring, make me want to try harder”, said one member of CFB.</p>
<p> </p>
<p>When the 2012 CF games registration opened; not only one, not two, but three Kiddoo’s registered for individual competition. Not surprising to anyone at CFB. True competition in Kiddoo Style.</p>
<p> </p>
<p>Throughout the year, several times a week, the phone rings and it is Phill to compare his daily score at the WOD with Jake’s from that morning.  Only a few times have one of them redone the WOD to beat the other. But it does happen.</p>
<p> </p>
<p>Last Friday at 6:30PM the CFB box was opened for spectators and open competitors, to complete the 12.1 WOD.  6 out of our 7 registered athletes took the WOD seriously and with great anticipation.  Coach split them up into groups of two, separating the sister from her brothers.</p>
<p>The box was packed with families, wives, one husband pacing and counting, dogs, children and athletes to watch and wish they were doing it to ( well maybe).</p>
<p>First up, Jake and Phill. Both had ideas on how to get through this; just keep moving, try not to slow down,  not look up, beat the other….</p>
<p>Jake ended with 104 .</p>
<p>Phill had a strong 100.</p>
<p>The CrossFit vibe filled the room, the vibe that feeds us all.</p>
<p>The second two group,  Kurt , is in the masters division from the Mammoth CF Box completed an impressive 85 and Gavin finished his 7 minutes of torture with 79.  Group three was Sister Krista and New CFB member Phillip.  Krista tied her Brother Jake with 104, and Phillip had 108!</p>

<p>While the parents are still gasping their breath and swearing and so glad that 12.1 is now behind them….</p>

<p>The Kiddoo Children jumped in, set up, they start measuring 6 inches and set the clock for their turn!  Impressive six Kiddoo Kids  3,2,1 Go….. 21.1</p>
<p>All the way, a family affair!  I can’t wait for 12.2. Go Kiddoo’s!</p>

<p><span style="font-family: 'Verdana','sans-serif'; font-size: 9pt;">I don't like not being 100%. I am not taking it well. Luckily, for my pride I have been busy with the kids, and the class times, have just not worked for me.&nbsp; I am not sure what I did.&nbsp; There is no ONE even that I remember doing and then saying, &ldquo;oh , that hurt."&nbsp;&nbsp; So that is even more frustrating.&nbsp; This pain is giving me time to think about what is going on in my life and what I need to let go of in order to stay sane.</span>

<p><span style="font-family: 'Verdana','sans-serif'; font-size: 9pt;">It is also really ruining my Triathlon training.&nbsp; Here, I have this great goal for the new season and I am not able to do my training fully.&nbsp; I do have a good, fun group of people that are very excited about this Multi-sport activity, and it is helping my spirits. :)</span>

At 1:06 &nbsp;I am in the background! Of course it is just the back of my head... &nbsp;hee hee. &nbsp;There were three people from my cert in this video! &nbsp;I love that they portray more of the everyday people trying the open this year! &nbsp;What a fun time for CrossFitters everywhere.</p>

<p>Triathlon training two weeks in and it is getting better for me. &nbsp;I have a great group of people that have shown interest in starting this wonderful multi sport with me. &nbsp;It has been fun getting some new people involved. &nbsp;We are going to head out to keough&rsquo;s this week for some swimming. &nbsp;We have 12 weeks for some of them, and it will be their first Tri! &nbsp;Anyone else want to join in?</p>

<p>We have Krista, Phill and Jake registered for the open to represent CrossFit Bishop! Go Team Kiddoo! Have you checked out their profiles on the games page! &nbsp;I am so, excited for them. &nbsp;The first workout comes out in 13 days! It will be great fun to watch and cheer these athletes on when they do their workouts at CFB.</p>
<p>I know I am not anywhere near going to the games or regional&rsquo;s, I am still being humbled by workouts, even when I do them at home. &nbsp;But I have decided to try the WOD's as they are posted. Maybe next year we can get more CFB registered in the Open.</p>

<p>I started my triathlon training this week. &nbsp;Adding Riding, running and swimming into my CF routine. I made a specific schedule to do one, or two activities a day. &nbsp;The first two days I failed miserably. &nbsp;I am going to have a rough make up day on Sunday! &nbsp;But I am back on track today- posting it on my bathroom mirror. &nbsp;Plus, if Jake see's it he can harass me more to MAKE time for it. &nbsp; On Tuesday, he timed me, and watched me do the WOD at our house. It was good to have him encourage me, and count for me, when I forgot what comes after 8.....</p>
<p>We have made a goal to start making more of a conscious effort to eat better too. &nbsp;We don't do horrible but we are not on the 80/20 program... So, that is our new goal. Instead of eating bad and then adding some veggies to make it seem ok, we are going to plan our meals out better, and just having the food stocked it what REALLY helps.</p>
<p>Life is a juggling act and I am trying to find a balance in it. Having four kids, being on the little league board, working 40 hours a week, trying to shadow coaching, maybe lunch with husband or a friend, drill team weekends, hockey games, homework, dropping lunches off, driving one kid to round valley, getting them ready for ski day....blah blah blah, and all i really want to do is go to the gym and be have more time in the evenings with my husband....I am I mom, a wife, a supervisor, a daughter, a sister, a friend, and at night... a CrossFit Athlete!&nbsp;</p>
<p>My new thought is one thing at a time. &nbsp;Just like in a LONG workout, you do one at a time. &nbsp;I need to incorporate this to my life. One thing at a time! &nbsp;</p>
